Kids' Quick Quiche
Customize this carbohydrate-balanced breakfast with your child's
favorite foods, or try different combinations to keep this recipe
in rotation.
INGREDIENTS

ready-made pie crust
2
cups baby spinach, washed,
chopped and packed
16
slices Canadian bacon cut
into bite-sized pieces
1
cup four cheese Mexican
blend shredded cheese
6
large eggs
1
teaspoon Cajun seasoning
or to taste
1 ¾ cups half-and-half
DIRECTIONS
Preheat oven to 375°. Line an
ovenproof pie plate with pie crust.
Layer spinach, Canadian bacon and
cheese in crust. Beat eggs, and add
seasoning and half and half. Pour
egg mixture into crust. Bake for
about 45 minutes or until egg is set.
Makes 8 servings.
