Savory Chili Without Sodium Overload Healthy home cooking is easy with this yummy slow cooker chili with half the sodium found in many canned soups. The I-can'tbelieve-it's-not-meat taste and texture appeals to the pickiest palates, while providing extra vegetables. INGREDIENTS 1 Tablespoon extra virgin olive oil 1 Tablespoon garlic, minced 1 portabello mushroom cap, diced 1 cup zucchini, peeled and diced 1 Tablespoon cumin 2 Tablespoons chili powder 2 teaspoons onion powder 2 teaspoons salt-free Cajun seasoning DIRECTIONS 1. Place ingredients in slow cooker in order, taking care not to stir. 2. Cook on low for 8–10 hours or on high for 4–6 hours. When ready to serve, stir and spoon into bowls.
