Spring 2014 community CALENDAR INGREDIENTS 16-ounce bag of whole-wheat orzo cup olive oil ¼ cup vinegar 2 Tablespoons fresh lemon juice 1 Tablespoon honey 1 teaspoon lemon zest 2 cups chopped cherry tomatoes 1 cup frozen corn, thawed 4 green onions, chopped DIRECTIONS 1. Boil six cups of water in a large pot. Add orzo. Bring to a boil again before reducing heat. Cook for 10 minutes or until pasta is tender. Drain pasta and place in bowl. 2. In a smaller bowl, mix together oil, vinegar, lemon juice, honey and lemon zest. 3. Stir dressing into orzo along with chopped tomatoes, corn and green onions. Add salt and pepper to taste. Makes 10 servings.
