oes your child crave the crunchy, savory taste of potato chips? Try this crispy
after-school snack instead to add an extra serving of legumes to your child's
diet. Use various spice combinations to fit your family's tastes, and recruit your
little ones to help mix up these spicy beans before you pop them in the oven.
INGREDIENTS
2 15-ounce cans of chickpeas, drained
and rinsed
2 tablespoons of extra virgin olive oil
Salt to taste
Spices to taste, such as paprika,
cinnamon, chili powder, cumin or
cayenne pepper
DIRECTIONS
1. Preheat oven to 400 degrees F.
2. In a bowl, mix chickpeas, oil
and spices.
3. Transfer mixture to baking sheet and
cook 30 to 40 minutes, until crispy.
4. Let chickpeas cool, then serve. Store
any leftovers in sandwich bags for
easy snacking.
