GOODBYE, FAT The dietary fiber in zucchini helps lower cholesterol two ways — first, by stimulating the liver to produce more bile to help digest fat, and second, by binding to cholesterol and sweeping it out of our bodies. THE CANCER FIGHTER Fiber keeps carcinogenic toxins from settling in the colon, which can help prevent cancer. The A and C vitamins and folate found in zucchini also protect against cancer by acting as antioxidants. Vitamins A and C are effective anti-inflammatory agents, as well. Along with zucchini's copper content, these vitamins deter the development of hyper-inflammatory disorders such as asthma and arthritis. Zucchini Patties with Zesty Dip INGREDIENTS Patties: 1 large zucchini, grated and excess liquid removed 2 egg whites 1 cup panko breadcrumbs ½ cup Parmesan cheese, shredded 2 tsp. olive oil Dip: 16 ounces nonfat, plain Greek yogurt 4 tsp. Mrs. Dash ® Ranch Seasoning pack (dry mix) DIRECTIONS Mix dip ingredients and chill. Combine zucchini, egg whites, bread crumbs and cheese in large bowl. Mix thoroughly and shape into four small patties. Heat skillet over medium heat and add oil. Once hot, add cakes and cook for 2–3 minutes per side. Remove from pan and place on baking sheet. Broil on high in oven for 3 minutes or until heated through.
