INGREDIENTS:
3 cups water
1½ cups quinoa
½ cup chopped onion
1 cup chopped sweet pepper,
any color
1 cup broccoli, butternut squash,
peas or other vegetable of
your choosing
1 cup milk
1 large egg, beaten
1 cup shredded cheddar cheese
salt and pepper, to taste

Preheat oven to 350ºF and grease a 2-quart casserole
dish with a light coating of olive oil.
Bring water to a boil on the stove, then add the
quinoa. Cook until all the liquid is absorbed.
Meanwhile, sauté the onion over medium heat until
it's translucent, then add the sweet pepper and other
vegetables. Cook until tender.
In a mixing bowl, combine the vegetables with the
cooked quinoa, and season to taste with salt and pepper.
Add the milk, beaten egg and shredded cheese. Stir to
combine, and then pour into your prepared baking dish.
Bake for approximately 15 to 20 minutes, or until
the casserole is set.
