Add a pinch of salt and pepper. Pour in olive oil and vinegar. Toss well to combine. Let stand at room temperature for at least one hour, but no longer than three hours. Serving Suggestions Bruschetta is traditionally served atop toasted slices of an Italian roll or baguette rubbed with garlic. You can also serve it by itself as a salad, or as a topping for grilled fish or chicken. Leftovers can be eaten on whole- grain crackers for a tasty, low-calorie snack. Serves four.
