Grilled Salmon with Tangy Cucumber Sauce
Ingredients 1 cup peeled, seeded, cubed cucumber 1 ½ cups fat-free sour cream 2 tablespoons chopped green onions 2 tablespoons chopped fresh dill 1 ½ teaspoons fresh lemon juice 1 teaspoon horseradish ¾ teaspoon kosher salt 1 (3-pound, ¾-inch thick) salmon fillet ¼ teaspoon freshly ground black pepper
Directions For sauce, combine cucumber, sour cream, green onions, dill, lemon juice, horseradish, and ¼ teaspoon salt in a medium bowl. Cover and chill 30 minutes.
Sprinkle salmon with remaining salt and pepper. Coat grill rack with cooking spray and place salmon on grill, skin-side up. Grill 3 minutes. Rotate salmon one-quarter turn and grill 3 minutes. Turn salmon over and grill 3 minutes or until done. Remove skin (if desired) and serve with sauce.
