Preheat oven to 400 degrees. 2. Puree beans and broth until the mixture is smooth. 3. Heat olive oil in small skillet, then add chopped onion and jalapeno. Saute for five minutes. Add garlic and cook another minute. 4. Add bean puree. Stir and cook for five more minutes and set aside. 5. Toss squash, zucchini, and onion slices into a bowl and coat with cooking spray. Season with salt and pepper and spread mixture over a foil- covered baking sheet. Roast the vegetables for 20 minutes. 6. Heat tortillas and fill with bean puree, roasted vegetables, chopped tomatoes, salsa, and queso fresco.
