THE FACTS ABOUT FASTS AND CLEANSES: SLOW AND STEADY WINS THE RACE. There's no better remedy for winter's chill than a warm, home-cooked meal. Take guilt-free comfort food to the next level with this whole grain-, veggie-, and protein-packed soup. INGREDIENTS 1 tablespoon olive oil ¾ cup chopped celery ¾ cup chopped carrots 2 cups sliced mushrooms ¼ cup shallots ¼ cup flour ¼ teaspoon salt ¼ teaspoon pepper 4 cups low-sodium chicken broth 1 cup instant wild rice 2 tablespoons chopped fresh parsley ½ cup low-fat sour cream 3 cups cooked, shredded turkey or chicken DIRECTIONS 1. Using a large saucepan, warm olive oil over medium heat. Combine celery, carrots, mushrooms, and shallots, and add them to the pan. Cook vegetables for five minutes— they should be soft when you remove them from the heat. Mix flour, salt, and pepper. Add this mixture to the vegetables. Cook for an additional two minutes, stirring the ingredients consistently while cooking. 2. Pour chicken broth into the pan, and bring ingredients to a boil. Once boiling, add wild rice and reduce heat. Simmer, covered, until rice is done. Cooking time may vary by brand, but instant rice usually cooks in five to seven minutes. Add parsley, sour cream, and shredded chicken or turkey. Stir, and simmer until soup is warm throughout. NUTRITIONAL INFORMATION Makes four servings.
