Stir pancake mix with water then store in the refrigerator while preparing the rest of the ingredients. 2. Bring orange juice to a boil in a pot. Add quinoa and stir. Return to a boil, cover, and reduce heat and simmer for 15 minutes or until orange juice is fully absorbed and quinoa is tender. Let quinoa sit for five minutes. 3. In a small stainless steel bowl, combine chopped apples with cinnamon and brown sugar. Fluff quinoa with a fork then fold the quinoa and the apple mixture into the pancake batter and mix well. 4. Heat griddle to 375˚F. Lightly coat griddle with vegetable oil spray. Pour 4 ounces of quinoa pancake batter on griddle for each serving. Cook for two to three minutes on each side, or until golden brown. Serves: 14 • Serving size: One pancake 2 I N S P I R I N G H E A LT H
