Health with Ease: Slow Cooker Recipes Sacred Heart Hospital’s clinical dietitian, Susan Kasik-Miller, shares two delicious and easy slow cooker recipes: beef stew, followed by hot caramel apples for dessert. BEEF STEW Ingredients 2 pounds lean red meat, such as sirloin, chuck, and flank steak, cut into 1–2 inch cubes ¼ cup flour 1 onion 1 cup sliced carrots 4 large potatoes, cubed 1 tbsp dried parsley 2 cups boiling water 1 pouch onion soup mix ¼ cup red wine Salt, pepper, paprika to taste Directions Dredge beef in flour, salt, pepper, and paprika and brown in a hot skillet. Add sliced onion and cook until onion is soft. Place the meat along with carrots, potatoes, parsley, and pepper to taste in a slow cooker. Mix boiling water, onion soup mix, and red wine and pour over the vegetable-beef mix in the slow cooker. Cover and cook on high for 30 minutes. Reduce to low heat and cook for 6 hours.  Tip: For a thicker consistency, mix 2 additional tablespoons of flour in ¼ cup warm water and pour into slow cooker. Heat uncovered for 15–20 minutes to thicken, then serve. Nutrition Information Total Calories: 320 Fat: 16g Carbohydrate: 15g HOT CARAMEL APPLES Ingredients 4 large cooking apples ½ cup apple juice ½ cup packed brown sugar 12 Red Hots candies ¼ cup butter 8 caramels ¼ teaspoon cinnamon Directions Peel 1-inch of skin off the top of the apples and then core. Fill each apple center with 2 tablespoons brown sugar, 3 Red Hots candies, 1 tablespoon butter, and 2 caramels. Place in a 3-gallon slow cooker and pour apple juice over apples. Sprinkle with cinnamon. Cover and cook on low for 4–6 hours or until apples are soft.
