St. Anthony Hospital 2801 St. Anthony Way Pendleton, OR 97801-3217 Savory Roasted Cauliflower This healthy side is easy to make and gives a major boost of veggie nutrition to any meal. INGREDIENTS 1 head cauliflower, cut into florets Olive oil or canola cooking spray Lemon pepper seasoning, salt-free 1 red onion, sliced 2 cloves garlic, minced 2 shallots, cut into quarters Parmesan cheese, grated INSTRUCTIONS 1. Preheat oven to 400 degrees Fahrenheit. 2. Spread cauliflower florets in a single layer on a cookie sheet or in a baking dish. Add red onions, shallots, and garlic. 3. Spray with cooking spray and stir to coat. Sprinkle with lemon pepper seasoning. 4. Bake uncovered for 15 to 25 minutes, until cauliflower is fork-tender and slightly browned. Stir once during baking. 5. Sprinkle with Parmesan cheese and return to oven for three to four minutes.
