COMING We welcome a familiar face back to the Radiology Department at Mercy Medical Center–Centerville. Spinach This spinach salad is perfect for a refreshing lunch. Eggs provide protein, while apples and figs add bright colors and pleasing texture and flavor. INGREDIENTS 4 large eggs 2 Piñata or Gala apples 8 cups fresh spinach 1 cup dried figs 1 cup whole-grain croutons ½ cup light honey mustard or poppyseed dressing Spring Salad DIRECTIONS 1. Hard boil the eggs by placing them in a saucepan, covering with water by 1 inch, and heating to the boiling point. Remove from heat and cover. 2. Let eggs stand in hot water about 12 minutes. Drain, fill the pan with cold water, and let sit for 15 minutes. Peel and slice. 3. Wash, slice and core apples. Cut apples and figs into bite-size pieces. 4. Wash and drain spinach. 5. Divide ingredients evenly among four plates. Top spinach with apples, eggs, dried figs and croutons. Drizzle with dressing. Home MATT THOMPSON, RT(R)(CT)(MR), is no stranger to the area. A Centerville resident for the past seven years, Matt is embracing his new role as Medical Imaging Supervisor with Mercy– Centerville. "I jumped at the opportunity to serve patients in my hometown," Matt says. "I love seeing friends, family members and churchgoers from the community." Matt's career has come full circle. Twelve years ago, he spent six months working alongside our staff as a radiology student. Today, Matt works with many of the same team members he first met when he was in school. By chance or divine providence, Matt has taken over the position from a mentor and dear friend. "I actually decided to get into radiology because of Kevin Bradley, who was the radiology manager before me," Matt says. "I job shadowed Kevin when I was 14, and we've stayed in contact over the years. He told me about the position opening, and it's been an honor training with Kevin during the transition." Whether at home or in the medical center, Matt is dedicated to improvement. He recently completed the Iowa Hospital Association's Leadership Development Program.
