Shreveport, LA 71106 318.869.1236 O wners Laura Downey and Chris Palumbo—both Certified Cheese Professionals—are a testament to the adage "Que sera, sera". With complementary backgrounds and fortuitous timing, their partnership was meant to be. Downey has a retail background, a hunger for real food, and a love of cheese. Palumbo, a caterer, comes from an Italian family passionate about food. They met at a shop where Downey worked part-time and Palumbo's catering company was often hired for parties. When the shop closed, Downey thought the location was perfect for a cheese shop and started planning with a financial partner. But the arrangement fell through, and eventually Palumbo—spontaneously—offered to team up with her. "Talk to your wife, sleep on it, and call me tomorrow," Downey said. Palumbo did, and Fairfield Cheese Company was born. In addition to maintaining their selection of domestic and imported cheeses, charcuterie, and specialty foods, the two owners run a well-respected cheese school.
