e Giacomini family has been raising dairy
cattle on Tomales Bay since 1959, but it wasn't
until 2000 that they decided to produce cheese in
house. Using raw, hormone-free milk from their
own herd, they began making Original Blue with a
recipe inherited by Point Reyes Farmstead's head
cheesemaker Kuba Hemmerling. Ultra-creamy and
soft, this California classic, which won Second in
its category at 2023 ACS, carries notes of sweet milk
with a well-developed blue flavor and lingering
notes of bright pepper.
