THE HOT LIS T 2024 culturecheesemag.com 59 RECIPES fWhisk together sugar, egg yolks, salt, and pepper in a medium mixing bowl. fPour ⅓ of the hot milk mixture over the egg mixture, stirring immediately (this allows the egg temperature to rise and prevents scrambling when added back to the pan). fAdd tempered eggs to the pan with the remaining milk mixture. Stir with a wooden spoon on low heat until thick. (It should coat the back of the spoon—this is called "nappe.") fRemove from heat and place pan in an ice bath to cool. fOnce cool, strain and churn in an ice cream maker, following manufacturer instructions. CANDIED BASIL fHeat oven to 250°F. fWhisk egg whites in a stainless-steel bowl until they are frothy. fSlowly sprinkle in sugar and whip for 2 minutes (mixture should remain frothy). fDredge basil leaves in whipped egg whites so both sides are covered. Place on a parchment-lined baking tray in a single layer. fBake for 10 to 15 minutes, or until dry. CHERRY TOMATO CONFIT fHeat oven to 250°F. fCombine all ingredients in a mixing bowl. fBake for 15 to 20 minutes in a small baking dish (ingredients should fit snugly in a single layer), or until tomatoes start to blister. BALSAMIC REDUCTION fCombine vinegar, ½ cup of water, and sugar in a small pot over medium heat. Bring to a simmer and cook until reduced by half. fRemove from heat and set aside to cool. ASSEMBLY fScoop ice cream into a dish or atop a cone, drizzle with balsamic reduction and cherry tomato confit, and garnish with candied basil. MOZZARELLA STICKS WITH MARINARA Sounds boring, right? Give these chain restaurant staples an upgrade by making them at home with quality cheese and homemade marinara. Patience is key: don't skip triple breading and freezing overnight. By frying frozen, the batter will seal around the mozzarella and you won't be left with a mess.
