DIRECTIONS
1. Preheat oven to 400 degrees
Fahrenheit.
2. Heat vegetable stock and olive oil
in saucepan and boil for about
10 minutes.
3. In a large pan, combine
vegetables and sprinkle
with rosemary.
4. Roast the vegetables for about
30 to 45 minutes, stirring
occasionally.
5. Drizzle vegetables with sauce and
serve with freshly baked bread.
INGREDIENTS MAKES 4 SERVINGS
½ cup vegetable stock
2 tablespoons olive oil
1 large sweet potato, peeled and cubed
1 butternut squash, peeled and cubed
2 medium red onions, chopped
1 cup whole chestnuts, peeled
1 tablespoon rosemary
2 medium beets, peeled and cut
into 2-inch chunks
