REINVENT YOUR FAVORITE SANDWICH BY REPLACING BREAD WITH THIS NATURAL TREAT. LOW IN CALORIES and containing nutrients such as calcium, iron, and vitamins C and K, sweet potatoes are a flavorful and fiber-rich addition to any holiday meal. Many chefs choose to prepare them in the form of casseroles that are often laden with excess sugar, but you don't have to choose a decadent dish to get your sweet potato fix. Instead, try letting them stand in for a bun when making sandwiches with leftover turkey. SIMPLE STEPS FOR PREPARATION Slice a large sweet potato into rounds that are about a half-inch thick. Whisk together a glaze of olive oil, cardamom, nutmeg, salt, or another favorite spice. Brush the glaze on both sides of the potato slices and pop them into an oven heated to 400 degrees Fahrenheit. Cook the slices for 25 minutes so that they are tender and a little bit crispy.
