R uth's Chris Steak House is the largest upscale steakhouse company in the world with locations around the globe. Founded in New Orleans, La., by Ruth Fertel in 1965, Ruth's Chris specializes in USDA prime grade steaks broiled at 1,800 degrees, served on a 500-degree plate with salt, pepper and a pat of butter to give it that Ruth's Chris signa- ture sizzle. Ruth's Chris Steakhouse has been in business in Troy (755 W. Big Beaver, Suite 151) for 20 years, and has just undergone a "refresh" of the dining area and lounge. New fixtures, art, flooring, walls, seating and lighting bring dazzle to the venue while updated audio-visual equip- ment provide the necessary technical advances for the private din- ing room areas where meetings and seminars take place. I met with Kellie Holcomb, Ruth's Chris' regional sales and catering manager, to talk to her about the Troy Ruth's Chris and its newly updated décor and, of course, to take the tour. There hasn't been any heavy con- struction work, but the newly remod- eled bar and restaurant areas look clean and sophisticated, and the art- work is extraordinary. "The artwork is really the highlight of the refresh. We brought in a sense of Detroit architecture, automobiles and Detroit sports teams," Holcomb says. "We also have one of our small dining rooms dedicated to a graffiti artist." The core things that have always represented Ruth's Chris Steak House remain the same, including the menu and yes, the steaks. The Sizzle, Swizzle and Swirl Happy Hour is open Monday through Friday from 4-6:30 p.m. and features its own separate menu with happy hour pricing. But don't expect the typical bar food fare. With offer- ings like Prime Burger with Fries, Seared Ahi Tuna and Crab Beignets to pair with Ruth's Manhattan, a Gin Basil Smash or a Classic Cosmo, Ruth's Chris happy hour is a fantastic way to kick off any weekday evening. When it comes to being a world-class host, Ruth's Chris prides itself on following in its founder's footsteps. Ruth Fertel opened the first Ruth's Chris in 1965 and has repli- cated her generous Southern hospitality in all her locations and in all the details with- out compromising her high standards. That also includes Ruth's Chris' off-site catering; whether it's a small business gathering or a 100-person wedding reception, the measure of excellence is the same. Ruth's Chris Steak House has grown from those humble Louisiana roots to a global entity that is now traded on the NASDAQ stock exchange. To honor the generosity of Ruth Fertel, who fed the linemen working to restore power in New Orleans fol- lowing a hurricane many years ago, and as a sign of appreciation for their ongoing success, Holcomb explains that Ruth's Chris routinely partici- pates in community outreach projects. As the sales manager, she works to engage the staff and donate food to at least four charity events every year, and most of those are focused on chil- dren's charities. Organizations such as Kids Kicking Cancer have benefited from their generosity. "Nobody gets paid to do any of these events; everyone volunteers their time and our staff is more than nosh PHOTOS BY JERRY ZOLYNSKY Mary Meldrum ABOVE: Photos of the Detroit area and cars can be found throughout the dining area.
