The number of bacterial infections caused by raw milk has increased over
the last few years. Has the raw food craze gone too far?

ProfessIonals and
raw food advocates both
recommend drinking
milk as part of a healthy,
well-balanced diet. What they
don't agree on is whether to pasteurize
the milk, with the latter camp claiming
pasteurization kills essential nutrients. A new
FoodNet report from the Centers for Disease
Control and Prevention might add more
credence to the pro-pasteurization camp.
The report shows a 14 percent increase in
Campylobacter poisoning in the United States
between 2006 and 2012. Campylobacter is a
bacterium commonly found in unpasteurized
dairy products. While this rise is alarming,
the actual number of cases of Campylobacter
poisoning was small—only about 14 per
100,000 people sampled. However,

Campylobacter poisoning can be fatal or
lead to severe complications, including
Guillain-Barré syndrome and arthritis.
not buyin' it
The sale of raw milk for human consumption
is prohibited in Colorado. However, "cowshare"
programs—in which individuals purchase
stock in a cow from a local farm and receive a
portion of its milk production—is permitted
by state code. Before you buy into a cowshare
program, it's important to understand the
risks of drinking raw milk. If you're worried
pasteurized milk is short-changing you on
nutrients, rest assured. Contrary to popular
belief, pasteurization doesn't actually reduce
milk's nutritional value.
