Easy SNACKS Diabetes-Friendly ADD VARIETY TO YOUR MEAL PLAN WITH THE FOLLOWING RECIPES. FRUIT BOWL SALAD Perfect for summer barbecues, fruit salad is a refreshingly light dessert that adds a splash of color to your table. INGREDIENTS* 1 cantaloupe 1½ cups cut or whole berries 4 kiwi, peeled and sliced ¾ cup grapes INSTRUCTIONS 1 Halve the cantaloupe, remove seeds, and use a melon baller to scoop out servings of fruit. Mix the fruit together and add it to the empty shell. 2 For an additional burst of flavor, drizzle fruit with a honey- mint dressing made by combining two tablespoons each of fresh mint, honey, and lime and orange juices. A one-cup serving of fruit salad contains 15 grams of carbohydrates. *Mix and match ingredients based on your favorite fruits and/or the availability of fresh seasonal produce. Inspired by recipe.com's "Fruit Bowl Salad with Honey-Mint Dressing" SPICED NUTS Nuts are a low- carbohydrate food packed with healthy fats, protein, and fiber. For a sweet afternoon treat, bake nuts with a dusting of sugar and spice. INGREDIENTS 1 Tablespoon beaten egg white 2 cups halved nuts of your choice ¼ cup sugar or artificial sweetener 2 teaspoons cinnamon ¼ teaspoon nutmeg ¼ teaspoon ground cloves 1 Coat the nuts of your choice with egg, and set aside. 2 In a medium bowl, combine sugar and remaining spices. 3 Pour over the nuts and spread on a jellyroll pan or cookie sheet. 4 Bake 30 minutes at 350 degrees Fahrenheit. A 1/4-cup serving of nuts contains 15 grams of carbohydrates and 6 grams of protein.
