HEALTHY RECIPE: BAKED CHICKEN FINGERS Make over this family favorite to reduce calories, saturated fat, and sodium without sacrificing taste. "TO ACHIEVE A HEALTHY body weight, adults should limit fat consumption to 30 percent of total calories," says Janis Franks, DTR, Director of nutritional services at Rhea Medical Center. "Baking foods instead of frying them is one way to help reduce the amount of fat in your diet." Ingredients 1 pound boneless, skinless chicken tenderloin, rinsed and patted dry 1 cup egg substitute 1½ cup flaked, high-fiber cereal, crushed Directions Preheat oven to 350° Fahrenheit. Dip each chicken strip in egg substitute, and roll in cereal to coat. Place coated strips on a non-stick baking sheet. Bake for 18 to 20 minutes, turning after 9 minutes, until chicken is cooked—white, not pink, inside.
