At home: Stand while folding laundry. At work: Have a walking meeting instead of a seated one. Out and about: Park your car farther away than you normally do. Asparagus is a spring veggie that complements just about any meal. Visit the Pendleton Farmers Market to purchase some fresh asparagus and try this Asian-influenced salad. INGREDIENTS For the vinaigrette: 2 tablespoons extra virgin olive oil 2 tablespoons rice vinegar 3 tablespoons mandarin orange juice (reserved from oranges) 1 tablespoon soy sauce For the salad: 1 cup uncooked brown rice 3 1 / 3 cups fresh asparagus, trimmed 2 11-ounce cans mandarin oranges (drained, juice reserved) 12 ounces cooked chicken breast (cut into chunks) INSTRUCTIONS Whisk together the ingredients for the vinaigrette and set aside. Cook the rice. Cook the asparagus in steamer basket over one inch of boiling water for 5 to 10 minutes, until it reaches your desired firmness. Rinse the asparagus and slice it into one-inch pieces. Mix the vinaigrette with the asparagus and all other remaining ingredients. Serve and enjoy!
